In the third chapter of Paper Mario: The Thousand-Year Door, one finds an egg in which Yoshi is located. After the fight against the steel brothers, Yoshi will finally awaken. (steel brothers are fight number 10). Depending on how long you wait until the fight with the Steel Brothers is over, you can influence the Yoshi Colours and Hatching Times. (If you want to save a certain paint before the fight, then you can always load). Yoshi starts with the paint green. After 20 minutes, the cycle starts all over again.
